Mushroom Linguini

One of the easiest meals I’ve made is this mushroom linguini from Simply Delicious. Here’s how…

Ingredients (Yields=3 to 4 servings):

  • 3/4 lb Linguini
  • 8 oz Baby Portobello Mushrooms, sliced
  • 2 T Olive Oil
  • 4 Garlic Cloves, minced
  • 1/2 cup Heavy Cream
  • 1 Juice of Lemon
  • 1/4 cup Parmesan, shaved or powdered
  • 2 T Fresh Basil, chopped
  1. Cook Linguini according to box, about 11 minutes; drain
  2. Meanwhile, heat olive oil in a sauté pan on medium high heat
  3. Add sliced mushrooms and “fry” until soft and golden brown, about 6 minutes
  4. Add garlic and sauté with mushrooms for 1 minute
  5. Stir in lemon juice and cream
  6. Add cooked pasta and mix well
  7. Stir in cheese and basil

*Sprinkled with goat cheese before eating. Can you tell I’m on a goat cheese kick?
