Fancy Grilled Cheese

Here’s a recipe for a grilled cheese that I did a few weeks ago. With a  few upgrades in the ingredients, it became “the fancy grilled cheese”.

Ingredients (makes 2 sandwiches):

  • 3 slices of bacon
  • Grated Fontal cheese
  • 2 Slices Aged Swiss
  • 1/8 teaspoon crushed red pepper flakes
  • 4 slices of bread (I used sour dough)
  • 1/2 medium tomato, sliced
  • 1/2 tablespoons butter
  • 1 garlic clove, cut in half and peel for rubbing
  1. Cook bacon as directed on packaging, drain grease
  2. Lay all 4 slices of bread on a clean surface and lightly butter one side on each slice
  3. On two slices of bread (non butter side), layer swiss, grated Fontal, tomato slices, cooked bacon and red pepper flakes
  4. Place the other two slices of bread on top (butter side up)
  5. On medium high, place both sandwiches in the pan (butter side down)
  6. Heat until the bottom side is golden brown, then flip and repeat
  7. Remove the sandwiches from the heat, rub the halved and peeled garlic clove across the bread (An important step for extra flavor)
