Here’s a recipe for a grilled cheese that I did a few weeks ago. With a few upgrades in the ingredients, it became “the fancy grilled cheese”.
Ingredients (makes 2 sandwiches):
- 3 slices of bacon
- Grated Fontal cheese
- 2 Slices Aged Swiss
- 1/8 teaspoon crushed red pepper flakes
- 4 slices of bread (I used sour dough)
- 1/2 medium tomato, sliced
- 1/2 tablespoons butter
- 1 garlic clove, cut in half and peel for rubbing
- Cook bacon as directed on packaging, drain grease
- Lay all 4 slices of bread on a clean surface and lightly butter one side on each slice
- On two slices of bread (non butter side), layer swiss, grated Fontal, tomato slices, cooked bacon and red pepper flakes
- Place the other two slices of bread on top (butter side up)
- On medium high, place both sandwiches in the pan (butter side down)
- Heat until the bottom side is golden brown, then flip and repeat
- Remove the sandwiches from the heat, rub the halved and peeled garlic clove across the bread (An important step for extra flavor)
