This was the perfect pasta dish for two. I found a recipe online but altered it a little bit and reduced it from a serving of 4 to a serving of 2. Here’s what you’ll need:
6.5 oz of shell pasta (half a box)
1/2 tsp butter
1 tsp minced fresh garlic
4 oz reduced fat (or 1/3 less fat) cream cheese (half a box)
1/4 cup milk
1/4 cup reduced fat sour cream
1/2T lemon juice
1/4 tsp salt
1/8 tsp red pepper flakes
7 oz artichoke hearts (packed in water), drained and chopped (about a half a can or 4-5 hearts)
5 oz chopped, frozen spinach (thaw and drain water) (half box)
1/4 cup parmesan cheese
Cook the pasta according to the box’s directions and drain. On medium heat melt the butter and saute with garlic. Add and melt the cream cheese. Pour in milk, sour cream, lemon juice, salt, and red pepper flakes. Stir. Add chopped artichoke hearts, spinach, and parmesan cheese. Stir. Toss mixture with pasta.

Is that the recipe halfed or the full recipe? Looks soooo good!!
It was VERY good! This is half. Since it’s just AR and I, I half all my recipes. If you just double my ingredients, it should serve 4. Plus a full recipe uses a full box of spinach, cream cheese, and can of artichoke. I had half of those ingredients left. But we ended up using the spinach and artichoke in other recipes is current week!
